Bheja Fry or Moolai Varuval or Lamb brain masala recipe with step by step pictures - Moolai Varuval is one of my favorites from Junior Kuppanna Resto. I make sure to order it, everytime I go. They have some juicy brains ;) Last visit, I and my friend went near the kitchen to appreciate the chef who made the bheja fry. We got to know that the lamb brains are usually tossed in oil, onions and mutton gravy that they prepare in the curry section. Simple. isnt it ? So next time when you make a mutton curry, do try this method. I am sure it will taste yummy. so, this preparation of brain fry or masala is so simple. Anybody can make it and the brains don take longer time to cook. A delicious bheja fry  can be made in few minutes of time. So, lets check the recipe.

Marination time - 5 minutes        |          Cooking time - 2 mins           |            Serves 2 to 3




Lamb Brains 4 washed


Big onion 1 chopped


1 green chilly


1 tspn red chilly powder


1/2 tspn turmeric powder


1/2 tspn garam masala powder


1/2 tspn ginger garlic paste


coriander leaves chopped








mustard seeds


Jeera seeds


few drops of lemon juice




Step 1 - Heat a saucepan with turmeric powder and little salt. Add the brains and boil for 2 minutes. Remove the scum that collects on the top. Drain and keep the brains aside. Let all the water drain well.

Step 2 - Heat a pan with oil. Add mustard seeds, jeera seeds. Once the smell comes out, add chopped onions, green chilly, curryleaves. As the onions turn golden brown, add ginger garlic paste. Let the ginger garlic paste cook in medium flame for 2 minutes. The ginger garlic paste if not cooked well, spoils this dish.

Step 3 - Add red chilly powder, garam masala in oil. Keep the stove in low flame. Once the masalas saute well, add the brains. Saute in a medium flame for atleast 8 minutes. Use your laddle to break the brain into pieces. Check seasoning and add salt.

Step 4 - Once the bheja or brain turns golden brown, add coriander leaves and few drops of lemon juice. Serve hot with pooris or paranthas or plain rice.
