Prawn Pollichathu

PRAWNS POLLICHATHU / CHEMEEN POLLICHATHU step by step recipe with pictures - Prawns pollichathu is a crowd pleaser. One of the best delicacy from God's own country Kerala :) Pollichathu is basically searing followed by slow cooking. The meat/seafood is seared first, then packed with a tangy spicy masala in a banana wrap. Finally the banana wrap is slow cooked and served hot :) No words to describe the end result, its amazing. He, who neither slumbers nor sleeps (Psalm 121:3–4), works the night shift for you as you sleep! Now lets check the recipe :)

chemeen Pollichathu-kerala

Prawns pollichathu recipe - Serves 2, Cooking time - 30 to 40 mins

Ingredients:

Prawn Pollichathu-1

Searing Part

cleaned Prawns 150 gms

1/4 tspn fennel powder

1/4 tspn pepper powder

1/4 tspn turmeric powder

1/4 tspn coriander powder

1/4 tspn red chilly powder

1/4 tspn garam masala powder

less than 1/4 tspn salt

For the tangy masala

1/2 tspn fennel powder

1/2 tspn pepper powder

1/2 tspn turmeric powder

1 tspn coriander powder

1 tspn red chilly powder

1/2 tspn garam masala powder

1 green chilly finely chopped

Coconut oil

1/2 cup small onions or shallots crushed or blended coarse in a mixie

1 tomato chopped

curry leaves

1 inch ginger & 6 pods garlic crushed

coconut oil

salt

water

banana leaf

rope or thread

Method

Step 1 - Coat prawns with the ingredients in searing part.

Step 2 - Heat a pan with coconut oil. Add the prawns in the pan and roast them until the color changes on both sides. Prawns turn completely opaque. The searing process will not take more than 2 minutes for the full batch. Remove the prawns and set them aside.

Step 3 - In the same pan,to the left over oil, add little oil if required. Add green chilly, crushed ginger garlic, curryleaves one by one and roast them until the aroma comes out. Add the crushed shallots or onions and saute them until they turn golden in color.

Step 4 - Add the masala powders and saute in a medium flame. Take care not to burn the mix.

Step 5 - Add the tomatoes, cover cook for a minute and the masala is done. Check seasoning and switch off the stove.

Step 6 - Take a banana leaf, brush some coconut oil and sprinkle some curry leaves.

Step 7 - Layer the tangy spice masala first, prawns next. Repeat for 2 to 3 layers.

Step 8 - Wrap the prawns masala mix as shown in below picture.

Step 9 - Heat a tawa with some coconut oil, place the wrap. Roast the wrap in a medium flame on all sides atleast for 15 minutes. The banana leaf turns almost brown on every sides. And you are done :) Serve hot!

Notes

1. You can prepare a big batch and make many wraps. Slow cook the wraps on a tawa.

3. A spicy dish it is, feel free to reduce the level of hotness to suit your taste buds.

3. Prawns can be replaced with pearl spot fish/chicken.

4. If you like more tangy, add a tomato or little bit of tamarind extract.

5. You can also add little freshly squeezed coconut milk at the end of masala preparation to give it a thick semi gravy consistency.

6. Do not open the wraps until you serve them :) Serve with roti/rice.
